-Start by taking your chuck roast cuts, and pat em dryyy. Slice the beef into cubes and chill them in the freezer for a bit to ensure a clean grind.
-Once chilled, run the beef through the meat grinder with the fine setting—one pass will do. After grinding, mix the beef with your hands to evenly distribute the fat and make the mixture a little tacky.
-Weigh out 3-ounce portions of meat and form them into meatballs.
-Fire up the grill and cook the bacon and set it aside. Make your smash burgers by gently pressing down each meatball with a pinch of salt.
-,Dice up the red onion, tomato, and lettuce. Shred the mozzarella, American, and cheddar cheeses. Chop up your smash burgers and bacon into small chunks.
-For the burger sauce, combine ketchup, mustard, mayo, Worcestershire sauce, granulated garlic, and cracked pepper to taste. Mix everything well.
-In your stand mixer with the hook attachment, combine the following:
-Knead gently until everything comes together, then push the dough down into the bowl and cover with a kitchen cloth. Let it sit for 20 minutes.
-After 20 minutes, add the following:
-Let the dough knead for 6-10 minutes until smooth. Remove the dough and transfer it to a greased bowl. Cover and let it sit for 30 minutes.
-Stretch and fold the dough every 30 minutes for the next couple of hours.
-When ready, pull the dough out and weigh it. Divide it into 3 equal pieces. Roll each piece into a tight, smooth ball. Place them into greased containers with lids and store them in the fridge for a few days. The longer the dough ferments, the tastier it will be!
-When ready to use, pull the dough out and let it sit to reach room temperature.
-Flour your surface and hands, and then place the dough ball on the table. Begin pressing it outward, forming the crust and stretching the dough as wide as you desire. Be gentle to maintain the crust.
-Transfer the dough onto a pizza screen and start building your pizza.
-Spread your burger sauce (desired amount) evenly across the dough, right up to the edge. Add the shredded cheeses, then top with burger chunks, bacon, red onions, and pickles. You can sprinkle some extra cheese on top if desired.
-Preheat your pizza oven to 700-750°F. (Or conventional oven to 550°F and cook until desired)
-Place your pizza in the oven and cook for a few minutes. Rotate as needed.
-Once the pizza is close to your desired crispiness, shimmy it off the screen and turn on the flame. Rotate your pizza frequently until it reaches the perfect level of crispy deliciousness.
-Once out, you can add some shredded lettuce and diced tomatoes, and an extra squirt of that burger sauce!
