-Take your chicken wings and pat em dryyyy. If you're using whole wings, break them down into flats and drums for more even cooking.
-Season the wings generously with Chuds Snakebite or your seasoning of choice.
-Place the wings on a wire rack. This helps with air circulation and crispiness. Set the rack on the upper shelf of your pellet grill.
-With the wings loaded onto the grill, turn it on and set the temperature to 400°F. Let the grill come up to temp with the wings already inside.
-Check the wings after about 20 to 30 minutes. Flip them to ensure even cooking.
-Close the lid and cook for another 20 to 30 minutes. Spray the wings with duck fat to help them crisp up, and continue cooking.
-At this point you can either take your hot sauce spray bottle and spray them while they’re still on the grill. Let the sauce tack up for a couple minutes, flip the wings, and spray again. Cook for a few more minutes to finish.
OR
-Alternatively, pull the wings off the grill and toss them in your favorite hot sauce or seasoning rub for a final flavor boost.
-Let the wings rest and cool slightly before diggin in.
